Bramble’s farm-to-table catering approach is inspired by Bilston Creek Farm, where mornings spent foraging in the gardens are followed by long table feasts. Bilston produces honey, lavender and heritage apples, and grows herbs, edible flowers and garden-fresh produce to accent our menus.
Based in the rural community of Metchosin, we’re surrounded by small-scale farmers growing fruits and vegetables, and raising the best lamb and pork around. We’re proud to make local farmers, fishers and foragers from Metchosin and throughout Vancouver Island the highlight of our menus. When we can, we make our guests a part of the harvesting and cooking experience, giving them a chance to see and feel where their food comes from.
Executive Chef Sandi Irving
We’re lucky to have Sandi as the head of our kitchen, bringing her passion for fresh, local flavours and her wealth of experience creating menus that capture the pacific northwest spirit. Prior to joining our team, Sandi was the Executive Chef at the world-renowned Nimmo Bay Resort, and previously worked at some of Vancouver Island’s top restaurants including the Sooke Harbour House. Her cooking style is a reflection of her personality–joyful, generous and uncompromising. Simply put, she makes the kind of food we all want to eat.
Bramble Catering is exclusive to Bilston Creek Farm and not currently available for off-site catering.
